Medium roasting brings out more of the nutty, honey, and warmer qualities of the tea while reducing the grassy, floral, and sharp notes. Also, during the roasting process, some caffeine will volatile out, reducing the amount of caffeine in the tea. 

Medium roasting is a right balance to evolve this tea without being too strong where the delicate and complexity flavor and aroma of the tea are compromised.
